Hey guys and gals,
So since I’ve been CC-less, I’ve found that one of the biggest (and most pleasant) decisions of my day is deciding what me and my folks are going to eat for dinner. My parents have graciously agreed to follow my “flexitarian” diet for the length of my stay, which has proved something of a challenge.
(edit: my father has agreed, but not graciously. Here he is quoted after looking at the non-meat based tacos: “Peppers and beans? How pathetic!”) (my father, despite having diplomat status, is not known for his diplomacy)
Anyways, I’ll probably be sharing all the fun things I’ve been selecting for dinner/desert every night on the hopes that we can gain inspiration from each other!
The absolute BEST meal we have had so far is a simple variation from a meat-based dish. I found it on the New York Times Cooking blog (link below) and even without a subscription you should be able to access it. If not, let me know and I can send it to you. We did make it with the lamb but I ate around it (eg. potatoes and carrots) and that was delicious! spicy though, so put some yogurt on the side to cool yourself down.
Also if you are cha-chink challenged or morally opposed to meat, make it without the lamb and it will still be delicious! Serve with rice 🙂
I have big plans for desert tomorrow so stay tuned…no spoilers, but their may be olive oil involved…
